I often substitute at least half (sometimes all) white sugar with agave nectar, substitute oil (or butter) with applesauce and I toss in a quarter cup (or so) flax seed to increase fiber content. The Tonklings have never complained or noticed and the only recipe that hasn't really worked with these substitutions is my sugar cookie recipe- which I leave chock full of fat and sugar and top with homemade cream cheese icing.
