Recipe: Lightly Smushed Potatoes

This is a quick, easy and fairly healthy way to prepare potatoes. Plus with BB sized Potatoes on sale for 59 cents a pound they are really budget friendly.

  • Bring a pot of lightly salted water to boil
  • Wash 8 BB sized Potatoes. I do 4 each of reds and yellows
  • Cut Potatoes into 4ths (leaving the skins on) and add to water
  • Boil until fork tender
  • Drain Water and return to stove
  • Add 1 tbs Butter, a drizzle of Olive Oil and a few grinds of Sea Salt and Pepper
  • Stir until the edges of the Potatoes are roughed up and serve
The hands on-time for these spuds are much less then the mashed variety and the final product is just as tasty.
