Cookie Rules

I've been trying to find a "healthy" cookie recipe and after making Nikki's Healthy Cookies I have decided that cookies need sugar to qualify as "cookie". They also need to taste good. So I've just tossed in a batch of oatmeal cookies. They are fairly healthy, but also taste good. BONUS!

Later this week I'll make plain old Chocolate Chip Cookies - you know - REAL cookies.

Here's how I "healthy up" our cookies: I use half white flour, half whole wheat flour. I often substitute at least half (sometimes all) white sugar with agave nectar, substitute oil (or butter) with applesauce and I toss in a quarter cup (or so) flax seed to increase fiber content. The Tonklings have never complained or noticed and the only recipe that hasn't really worked with these substitutions is my sugar cookie recipe- which I leave chock full of fat and sugar and top with homemade cream cheese icing. Mmm...

Those are great suggestions! I'll give them a try. I generally use a 50/50 mix of wheat and white flour, but I need to give the agave nectar a try.
