- 1.5lbs beef strips marinated for 5 hours
Marinade: (sorry no measurements) some soy sauce, some honey Dijon mustard, Worcester sauce, garlic powder and powdered ginger.
- 1/2 lb of asparagus cut into 4 inch pieces
- 3 carrots cut into matchsticks
- 3/4 cup chicken broth
- 2 tbs soy sauce
- 2 tbs balsamic vinegar
- 2 tbs orange juice
- 1 tbs brown sugar
- 1/4 tsp red pepper flakes
- 1/4 tsp garlic powder
- 1/4 tsp powdered ginger
- corn starch to thicken
- Stir fry the beef strips until almost done then set aside on plate.
- Drain off any liquid in pan and then added veggies and cook until tender-crisp.
- Add the beef and the next 7 ingredients, toss to coat.
- Push beef and veggies to the side of the pan and add corn starch to thicken the sauce.
- Coat beef and veggies with sauce and serve over quinoa.
