Yum! 9/19/10

Breakfast: Buttered Toast and a Banana
We stayed up WAAAAY to late last night and this was all I could muster. Starting a movie at midnight is a HORRIBLE IDEA when your child wakes up at 6am no matter what.

Lunch:
Leftover Sausage Pasta

3:00 Snack: Apples and dip (yogurt and caramel almond butter)

Dinner: Grilled Brats and Potatoes, Mandarin Oranges and Kiwi

Yum! 9/18/10

Breakfast: Bacon, Scrambled Eggs and Toast with Jam (Thanks to Michael!)
We've been getting our eggs from Campo Lindo Farm and while they are a little more expensive then the store brand white eggs, they are worth it! I love knowing that the hens are able to roam, and that we are supporting a local family farm. Plus in every dozen there is a little note from the farm!

Lunch: Hot Dog, Chips, Kiwi and Banana Slices
This seems to be our typical, unhealthy Saturday lunch.

(10:30 &) 3:00 Snack: Almond and Rice Crackers, Deli Turkey and Sting Cheese
These crackers are really good! Light, just a hint of salt and a little nutty. YUM!

Dinner: Blanc Burgers with Friends before going to WATERFIRE!

Yum! 9/15/10 (An Apple Edition!)

Breakfast: Cottage Cheese Pancakes with Unsweetened Applesauce
These pancakes were okay, not fantastic, but a great way to get some added protein. We topped them with unsweetened applesauce. I made a big batch and froze the rest for later.
Lunch: Sweet Apple Chicken Sausage with Egg Noodles and a Plum
I thought this sausage was great! Sadly, the plum was kind of mealy.

3:00 Snack: Granola and Applesauce

Dinner: Pork Chops, Spinach Salad with Quinoa and Baked Apples

Breakfast: English Muffin, Hard-boiled Egg, Banana

Lunch: Leftover Stroganoff

3:00 Snack: Grapes and Crackers with Cream Cheese

Dinner: Baked Pork Chops with Apples, Asparagus and Salad
Well we were without water yesterday so we just cooked a frozen pizza and ate on paper plates.

Breakfast: Hard boiled Eggs and English Muffins

Lunch:
For Greyson: Turkey, Grapes, and Cheese
For Morgan: Asparagus, Leftover Deconstructed Turkey Pot Pie and Kiwi
For Michael: Turkey Sandwich, Apple and Chips

3:00 Snack: Granola Bars!

Dinner: Ground Beef Stroganoff, Spinach Salad with Carrots and Raisins.

Per Request: Spinach Salad with Carrots and Raisins
Soak Raisins in a Cup of hot water, while they are soaking grate 2 Carrots with a Box Grater. Drain water from raisins and pat dry. Top Baby Spinach with shredded Carrots and Raisins. It couldn't be easier!

Yum! 9/12/10

Breakfast: Scrambled Eggs and toast

Lunch: Hot Dogs, Watermelon, Grapes and Chips
Last week Greyson couldn't get enough Watermelon, today he wouldn't touch it. He is such a toddler! He did LOVE Grapes today. He ate his share and mine!

3:00 Snack: Yummy Homemade Granola Bars (Today's batch made with 3/4c Unsweetened Coconut, 3/4c Shelled Pumpkin Seeds, 1c Mini Chocolate Chip and 1 1/2c Mixed Dried Fruit)
These are always a huge hit over here. I know the chocolate chips and the sweetened condensed milk doesn't make these the healthiest granola bars out there - but they are quick, easy and everyone loves them. Greyson stuffed his cheeks full and then signed for more!

Dinner: Deconstructed Turkey Pot Pie (Mashed Potatoes, Turkey and County Gravy) with Asparagus and Watermelon
This was a dinner that didn't come together as planned. I cooked the Turkey in the crock pot on Friday, but it was such a weird day that we ended up going out to eat. So then I planned to do Turkey and Sweet Potatoes for dinner only to find I had just 1 sweet potato - not enough for 3 people. So regular potatoes it was. Then I made gravy, which is very unlike me, but the turkey and potatoes needed something to bring them together. It turns out that mixing the turkey, potatoes and gravy together was delish! I just wish I had added some corn. Oh well, we had asparagus to round things out. Greyson only ate one piece of asparagus, but it is a start.

Yum! 9/10/10

Breakfast: Oatmeal and Apples

Lunch: Taco Soup and Cornbread

3:00 Snack: Cornbread and Jam (really it is unsweetened fruit spread)

Dinner: Crock Pot Turkey Breast, Sweet Potatoes and Salad
We ended up going out to eat, so the Turkey has been packed in the fridge for another day.

It's starting to feel like autumn and I'm craving the flavors of fall!

Yum! 9/8/10

Breakfast: Oatmeal with brown sugar, mixed dried fruit and yogurt
This was a hit with Greyson! He wasn't sure at first and did a few fake bites (taking the spoon to the edge of his mouth, but not putting it in) before taking a bite - then there was no stopping him! He ate his whole bowl full and asked for more.

Lunch: Sausage and Tomatoes (from last night), Salad, Watermelon
Well, I sent Michael to work with both leftover sausages. So I'm eating a weird, but strangely good lunch. A "sandwich" made from ham and leftover cauliflower gratin sandwiched between 2 whole-wheat crepes! It was surprisingly yummy!

3:00 Snack: Almonds and Yogurt
Yummy snack. Vanilla yogurt with a spoon of blueberry jam, some almonds and some graham crackers!


Dinner: Ordering Pizza for Michael's Birthday! HAPPY BIRTHDAY!

Yum! 9/7/10

Breakfast: Watermelon, Crepes with Jam and Ricotta Cheese
The Crepes were only okay. I still haven't mastered the art of a really thin crepe. Also, as much and I want to like Ricotta in things for the boost of protein and calcium, I'm still really "meh" about it. Greyson ate 1/2 of his and them tossed his plate on the floor. Great.

Lunch: Grilled Chicken (from last night) wrapped in a tortilla with broccoli slaw, watermelon and chips (for the adults, almond crackers for G)
So this lunch didn't happen. Well it did, I just left it at home. So I bought a salad at work. Boo. Since I didn't eat it for lunch it became my 3:00 snack (minus the watermelon and chips) since my work salad wasn't that good.

3:00 Snack: String Cheese and Deli Turkey
Nope. See above.

Dinner: Baked Sausage with Grape Tomatoes (from the garden), Cauliflower Gratin and Watermelon
No real surprise that I was the only one who liked the cauliflower. I thought it was great. G put a bite in his mouth for all of a second before spitting it back out. Michael took 2 begrudging bites.

Yum! 9/6/10

Breakfast: Scrambled eggs with black forest ham and cheese, avocado and whole wheat toast with blueberry jam

Lunch: The boys are having lunch with M's parents, but I'm having Turkey Sandwich (Honey Mesquite Turkey, Romain lettuce, Honey Dijon Mustard, Avocado, Broccoli slaw, Laughing Cow Creamy Swiss cheese), Watermelon and some Cheetos (guilty pleasure)

3:00 Snack: Rice cake with Almond butter and blueberry jam, watermelon

Dinner: Basil Marinated Grilled Chicken breasts, Green Salad (with Dried Apricots, Avocado, Broccoli slaw and Caesar Dressing), Grilled Grape Tomatoes (from the garden) and Watermelon
Dinner was great! The chicken was really moist and Greyson ate everything on his plate except for the lettuce (I just gave him 1 piece to try) and the tomatoes. He put the tomato in his mouth, but quickly took it back out.
